Since we do not serve tea here at New Mexico Tea Company, i do a weekly tea tasting every Friday evening. During the tasting we try 8 different teas; two white, two green, two oolong, and two rooibos. Its a great way to be introduced to a wide variety of flavors. Each session lasts about an hour and a half and is free of charge, a reservation is required as i can only seat 6 people.
If you would like to learn more in-depth about high quality Chinese teas, then Yatoes Tea Class if for you. Students will learn the Gongfu style of preparing and brewing traditional Chinese teas as well as learn about each tea’s origin, characteristics, quality and health benefits. The class is 2 hours and costs $35 per person.

Matcha: Izu Matcha is a fabulous example of a high quality Japanese Matcha grown in the Izu peninsula, not far from Tokyo. The tea has a pale emerald green color and when consumed on its own, frothed up with a whisk, has an almost jammy-smoothness belied by a somewhat sweetly astringent cup. ($8/oz)

Tea History: Afternoon tea is a light meal served between 3pm and 5pm. Historically the English would have this meal every day, however as time has progressed this custom has fallen out of fashion. In the United States this meal is often served in cafes or hotels for people who are celebrating a special occasion. Many people mistakenly call Afternoon Tea "high tea" because it sounds more elegant. High Tea is the main meal at the end of the day, and is served on "high" tables in the dinning room, while Afternoon Tea (sometimes called "low" tea) is served on coffee tables while the guests sit on low chairs or sofas.
The 7th Duchess of Bedford named Anna is credited with the invention of afternoon tea in the 1840's. While its obvious that the custom was not invented by one woman, rather evolving over time, she does provide an interesting story. Dinner was served at 8:30 or 9:00 in the evening and the Duchess would became hungry by the mid afternoon. She would secretly order a small meal of bread and butter, tarts, and biscuits, to be brought to her boudoir. She did not need to fear ridicule, for when she was discovered the custom was adopted by all.
