Despite its relatively short history (for a Chinese tea!) Keemun became known throughout the world by 1915 and in taste tests conducted by the leading tea companies of the day, was preferred over Darjeeling. In recent years tea connoisseurs have taken more to Assam and Ceylon black teas.

Preparation:
1 teaspoon per 8 ounces of pure water at 212°F for 3-4 minutes.
