Xi Hu Long Jing 龙井
Also known as Dragon well is produced by hand through a 10-part process. The side of West Lake in Zhejiang Province grows the tea used to produce Dragon well. Lung Ching is distinguished by its beautiful shape, emerald color, scented smell and tending sweet floral character.

This famous variety of green tea is produced mostly by hand and has been renowned for its high quality, earning the China Famous Tea title.

It is said that while visiting West Lake Emperor Qianlong took some time to watch the tea harvest, and decided that he would try it himself. While picking tea he received a message that his mother, the Empress Dowager, was ill and wished his immediate return to Beijing. He shoved the leaves he had picked into his sleeve and immediately left for Beijing.

Upon his return he immediately went to visit his mother. She noticed the smell of the leaves coming from his sleeves and he immediately had it brewed for her. It is said that the shape of Longjing Tea was designed to mimic the appearance of the flattened leaves that the emperor brewed for his mother.

Grassy Field   

A brew with an aristocratic air. When the leaves first meet hot water, the aroma has the grassy field, but there are some flowers in this field. This first infusion (2.5 min) is greenish amber and has a flavor of crunchy roasted vegetables and hints of flowers. The second infusion (3 min) is silky and even more delicious. There is a bit of earth and smoke below the fruit in what is now a delicate amber brew. A third infusion (3.5 min) yields a bit darker amber, and a subtle, smoky flavor.
