In a small saucepan bring water to a boil and add mint leaves.
Remove pan from heat and cover. Steep 6 minutes.
Add sugar and stir until dissolved.
Strain into a bowl or pitcher using a fine sieve.
Chill covered until cold. Freeze in an ice-cream maker.

Note: This recipe technically does not have tea in it. However a tea
could be used in place of, or in addition to, the mint.
Matcha Vanilla Delight Cookies Ingredients:
2 1/2 cups all purpose flour
1/8 cup Matcha
1 teaspoon baking powder
1/8 tsp sea salt
1 cup soft butter
1 1/4 cups granulated sugar
2 large egg yolks
1 1/2 tsp vanilla extract
Granulated sugar for sprinkling
Preparation:
Combine matcha, flour, baking powder, and salt in a medium bowl.
In another medium bowl, cream the butter and sugar then beat in the egg yolks and the vanilla extract or ground vanilla bean.
Gradually blend the dry ingredients into the wet ingredients.
Cover this mixture and refrigerate for one hour.
Preheat the oven to 375 degrees F. Lightly grease baking sheet(s)
On
a lightly floured surface, roll out the chilled dough to a thickness of
1/4 inch. Using a 2-inch cookie cutter, cut out cookies in your desired
shapes, and place 1 inch apart onto the prepared baking sheets. (If
you would like sugared tops, before baking, lightly press the tops of
the cookies into granulated sugar, then place on cookie sheets.)
Bake
for 10-13 minutes, until the tops start to brown, then transfer to wire
racks to cool, or remove cookies and place on waxed paper or newspaper.

Tea Loaf Ingredients:
1 1/2 cup brewed tea
6 oz Dried Blueberries
6 oz Sultanas
10oz Self rising flour
7oz Soft brown sugar
1 egg
1 1/4 cup flour
1/2 tsp Salt
1 cup milk
1 3/4 tsp baking powder
Preparation:
Brew the tea (I've heard Yorkshire as the tea of choice, but any black tea will do).
Mix together the tea, the dried fruit (I think the original recipe called for rasins instead of blueberries, but I don't care for them much) and leave them, covered, in the fridge over night (or longer, if you like).
Sift together the flour, salt, and baking powder before adding them into the sugar, fruit, and tea mix.
Add the egg pour into a 1lb loaf pan.
Bake in a preheated 350 degree over for 1 hour 45 minutes.
Night Time Chai Ingredients:

Herbal Chai
Stevia
Preparation:
Heat the cup of milk in the microwave for 2 min.
Add herbal chai and stevia (bag or loose leaf tea)
