Traditionally chai, with its base mixture of ginger, cardamom, cinnamon, and clove, is considered to be one of the more overtly spicy and exhilarating blends.

Because of the two conflicting characteristics of this tea, it makes a great late afternoon drink. It wont keep you up all night, but it might give you that last boost of energy to get you through the day.

Rooibos is well known to be one of the most relaxing hot beverages you can brew. The needle shaped leaves of the Red Bush, (Latin: Aspalathus linearis) produce a caffeine free drink that is noted by nutritionists and health consultants the world over for its soothing character.

Brewing Instructions:

Bring filtered or spring water to 212°F. Add 1 tsp of tea leaves to an 8oz cup. Pour boiling water over the tea leaves and let steep 6 minutes.

Other Brewing Options:

While the tea is brewing prepare your cup to receive the chai Ð put 2 teaspoons of sugar in the cup and add milk (about 20%) of the cupÕs volume. When the chai is ready Ð pour into your cup.

I'm a professional caterer. I recently purchased the Rooibos Masala Chai to serve over 200 people. They wanted Chai but without the caffeine. I originally planned to serve it hot, but it was such a warm day, I served it over ice. In a word, they loved it. Once man even said it was the best Rooibos tea he ever had. Not overly sweet, wonderful with honey and soy milk- caffeine free, which makes it a wonderful, evening treat. Nice spice balance without being to "earthy" or dark, yet is is still deeply flavorful and rich. We all love it.
